Equipment

  • Peeler
  • Citrus juicer
  • Pot
  • Bowl
  • Strainer
  • Blender
  • Measuring cups and spoons
  • Glasses for serving

Ingredients

  • 3 lemons
  • ½ cup sugar
  • 3 cups crushed ice
  • 1 cup lemon sorbet
  • ¾ cup vodka
  • 1 cup sparking rosé wine
  • 18 raspberries

Instructions

  • Peel one lemon and set the peel aside. Squeeze enough lemons to obtain 6 tablespoons of lemon juice, then reserve the juice.
  • In a pot, combine the lemon peel, sugar, and ½ cup of water. Bring the mixture to a boil over medium heat, stirring occasionally. Once the sugar has completely dissolved, remove the pot from the heat. Transfer the mixture to a bowl to cool, then strain it to remove the lemon peel.
  • In a blender, add 1 cup of crushed ice, ⅓ cup of raspberry sorbet, ¼ cup of vodka, 2 tablespoons of lemon juice, and ⅓ of the prepared lemon syrup. Cover and blend until the mixture is smooth.
  • Pour the blended mixture into two glasses. Add a splash of rosé to each glass and garnish with fresh raspberries.
  • Repeat the process with the remaining ingredients in batches to create a total of six cocktails.

Tips & Tricks

  • Use Fresh Lemons: Freshly squeezed lemon juice will give the best flavor compared to bottled juice.
  • Chill Your Ingredients: Ensure the rosé, vodka, and sorbet are well-chilled before making the spritzers to keep the drink cold and refreshing.
  • Prepare in Batches: For larger gatherings, prepare the lemon syrup in advance and blend the cocktails in batches as needed to keep them fresh.
  • Adjust Sweetness: Taste the mixture before serving and adjust the sweetness by adding more lemon syrup or a bit more sorbet if desired.
  • Garnish Creatively: Aside from fresh raspberries, consider adding a lemon slice or a mint sprig for an extra touch of elegance.
  • Non-Alcoholic Version: Substitute vodka with sparkling water or lemon-lime soda for a non-alcoholic version that’s just as tasty.
