Despite its fancy name, Shallot Gold is essentially caramelized shallots.

Diaz shared some pro tips for making this dish perfect, like adding a bit of salt to the shallots as they cook to draw out more water and coax out the sugars.

However, the real secret to Shallot Gold is patience.

“The only way to make shallot gold is to sit there and let those shallots cook down,” Diaz explained.

The segment included a touch of TV magic as Diaz reached for a pan of already caramelized shallots to demonstrate how they should look when done.

These golden-brown shallots were used to top off a roast chicken, showing just how versatile and delicious they can be.

That Memorable First Meal

The conversation soon turned to the first meal Diaz ever cooked for her husband, Benji Madden.

Barrymore prompted Diaz to share the details, and she revealed it was a Mediterranean feast.

“Mediterranean lamb chops, some couscous, and some broccoli and sautéed zucchini,” Diaz told the audience.

Of course, the Shallot Gold made an appearance in the couscous, adding a burst of flavor to the dish.
