Creamy Garlic-Turmeric Dressing

- 4 cloves garlic
- ¼ cup olive oil
- 1 lemon
- 2 tsp. ground turmeric
- 2 tsp. Dijon mustard
- 1 tsp. honey
- ¼ tsp. cracked black pepper
Heat oven to 400°F. Place garlic in small baking dish. Add olive oil. Roast until garlic is soft, about 15-20 minutes.
Grate 1 tsp. zest and squeeze 3 Tbs. juice from lemon.
Transfer lemon zest and juice, garlic, oil, turmeric, mustard, honey, and pepper to blender. Puree until smooth.
