- 1 cup oil vegetable, olive, or avocado
- 1/2 cup cilantro chopped
- 1/4 cup lime juice
- 1/4 cup white wine vinegar
- 3 cloves garlic
- 2 teaspoon sugar or sweetener of your choice
- 1/2 teaspoon kosher salt
In a blender or food processor, combine the lime juice, vinegar, garlic, salt, and sugar. Blend until the mixture is smooth and well combined.
While the blender is running, slowly pour in the oil in a steady stream, allowing it to fully incorporate.
Add the cilantro and pulse until it is finely blended but still visible in small flecks throughout the mixture.
Transfer the dressing to a container and store it in the refrigerator. Shake or stir thoroughly before serving.
