Cilantro-Lime Dressing

Ingredients

  • 1 cup oil vegetable, olive, or avocado
  • 1/2 cup cilantro chopped
  • 1/4 cup lime juice
  • 1/4 cup white wine vinegar
  • 3 cloves garlic
  • 2 teaspoon sugar or sweetener of your choice
  • 1/2 teaspoon kosher salt

Instructions

  • In a blender or food processor, combine the lime juice, vinegar, garlic, salt, and sugar. Blend until the mixture is smooth and well combined.
  • While the blender is running, slowly pour in the oil in a steady stream, allowing it to fully incorporate.
  • Add the cilantro and pulse until it is finely blended but still visible in small flecks throughout the mixture.
  • Transfer the dressing to a container and store it in the refrigerator. Shake or stir thoroughly before serving.
