Golden Crunch Fried Chicken

- 2 quarts oil
- 2 tsp. garlic powder
- 1 tsp. salt
- ½ tsp. pepper
- 3 eggs
- ½ cup hot pepper sauce Tabasco
- 1 cup self-rising flour
- 1 3-4 lb. chicken cut into 8 pieces
Heat oil in a large pot or deep fryer over medium-high heat until it reaches 350°F. Prepare a rack over a large rimmed baking sheet.
Mix garlic powder, salt, and pepper in a small bowl. In a shallow bowl, whisk together eggs and hot sauce. Spread flour in another shallow dish or pie pan.
Preheat your oven to 200°F. Season all sides of the chicken pieces with the garlic mixture. Dip each piece into the egg mixture, allowing excess to drip off, then coat with flour, shaking off any excess.
Fry the chicken in batches, turning once, until it is golden brown and no longer pink near the bones. This should take about 8-10 minutes per side. After 5 minutes, check the chicken. If it is browning too quickly, turn the pieces and reduce the heat to medium.
Once cooked, transfer the chicken to the prepared rack on the baking sheet. Place the baking sheet in the oven to keep the chicken warm while you fry the remaining pieces.
